Green Chicken Chili
Step 1:
1 cup Diced Onion
1 TB Cooking Oil
Heat oil in a pot and then cook onions until softened.
Step 2:
2 Large Jalapenos, seeds and inner wall removed, small diced
Add jalapenos (or serrano peppers if you want it hotter) and cook to soften.
Step 3:
1 Lb Shredded Chicken (see note below for using raw chicken)
1 16oz Jar Tomatillo Salsa Verde
2 cups Chicken Stock
1 can White Beans (Great Northern, Navy, Butter, or Cannellini work great)
2 tsp Granulated Garlic
1 TB Ground Cumin
1 TB Oregano
1/2 tsp Black Pepper
1 tsp Salt (make sure you salt test when finished and add more if needed!)
Add remaining ingredients. Bring to boil and then simmer until ready.
Step 4:
[Optional] Juice of 1 Lime (taste before adding as some salsa verde brands will already have citrus)
1 Bunch Chopped Cilantro OR Italian Parsley
Finish your chili by stirring in the fresh herbs and added optional lime juice. Don’t forget the final salt test!
NOTE:
If you’re starting with raw chicken, cook 1 pound ground or cubed chicken in 1 TB of cooking oil. Set aside and use in Step 3.
