Fisherman’s Eggs

Step 1:
Preheat an oven safe pan by placing in the oven and heating it to 350 degrees.
Step 2:
1 can Sardines with Olive Oil, do not drain
Sardines are cooked in the can during production at the cannery, so the olive oil absorbs a lot of nutrients. Empty all the contents of the can into a mixing bowl. Using a fork, crumble the sardines.
Step 3:
You can really customize this using your preferred vegetables. The version above and in the tutorial video uses the following:
2/3 cup Shallots, small diced
2 Large Bell Peppers, seeds and white membrane removed, diced
1 Bunch Italian Parsley, chopped
Juice of 1 Lemon (or more if you prefer)
2 tsp Crushed Red Pepper
1 tsp Granulated Garlic
Salt and Pepper to taste (different sardine can have different salt levels). Rule of thumb: keep incrementally salting until it tastes good to you! In this example, I used 1 tsp.
Mix ingredients thoroughly.
Step 4:
Two options: if you want the veggies more cooked, you can put the Step 2 mixture in preheated pan and baked before adding the eggs.
4 Eggs
Take the pre-heated pan out of the oven and put Step 3 mixture into pan and spread out. Gently crack the eggs in separate areas on top of the mixture.
Return back to oven and bake until eggs are done to your level of doneness.
Step 5:
1 tsp Crushed Red Pepper
Salt
When out of the oven, finish by salting the eggs and sprinkling the chili flakes on them.
In my opinion, this dish is much better warm so consider reheating leftovers.
