Shrimp Scampi

There is a reason that Shrimp Scampi is such a classic. It is easy to put together, but just tastes amazing.

This is an easily customized dish based on your preference. Feel free to adjust the ratios to suit your taste (my personal version contains twice the amount of Italian parsley!).

Step 1:

  • 6 oz. Pasta of your choice (penne rigate used in the photo and video)

In a pot of salted, boiling water cook the pasta. You can start prep of the other ingredients. When pasta is ready, simply drain and set aside.

Step 2:

This is a dish that comes together rather fast, so it is important to have your components ready by the stove.

  • 2 Cloves Garlic (more if you like!), minced

  • 1 cup Onions or Shallots, fine diced

  • 1 cup Italian parsley or herb(s) of your choice, chopped

  • Juice of 1 Lemon

  • 1 tsp Salt

  • 1 tsp Paprika

  • 1 tsp Crushed Chili Flake

  • 1/4 cup White Wine or Dry Vermouth

  • 8 oz. Shrimp, raw and deveined

Set aside ingredients and have ready by the stove.

Step 3:

  • 3 TB Butter

  • 2 TB Extra Virgin Olive Oil

Into a hot pan, melt the butter and then add the olive oil.

Step 4:

Into the hot butter/oil mix, add your onions/shallots. Stir until translucent and nearly golden.

Next, add the garlic and stir until softened.

Add the white wine/vermouth and the lemon juice. Cook further and reduce slightly.

Add your shrimp and cook on both sides until colors turn. Be careful not to overcook the shrimp as it takes very little time. Also, it will continue cooking as you add and mix the remaining ingredients.

Add paprika, salt, and crushed chili flake. Mix well.

Add pasta and Italian parsley/herb(s).

Enjoy with a crisp white wine, beer, or some sparkling lemonade!
