Bacon & Egg Pasta Salad

This satisfying pasta salad is great for a meal, pot-luck, picnics, and an easy pack-and-go lunch.

Step 1:

  • 8 oz. Pasta (Macaroni in this example)

Into a pot of salted, boiling water, add your pasta and cook until done.

Step 2:

  • 7 Eggs

Boil and peel eggs to your desired firmness.

Step 3:

  • Pack of Bacon

Start frying bacon in a pan.

Step 4:

  • 1 1/2 cup Mayonnaise

  • 1 TB Brown Mustard

  • 1 TB White Wine or Cider Vinegar

  • 2 tsp Paprika or 1 tsp Kashmiri Chili Pepper

  • 1 tsp Black Pepper

  • 2 tsp Salt

  • Juice of half a Lemon

In a large mixing bowl, combine ingredients until you form a consistent paste.

Step 5:

  • Add pasta from Step 1. Mix well.

  • Add peeled and diced boiled eggs from Step 2. Mix well.

  • 1 cup Rough Chopped Bacon from Step 3. Mix well.

Step 6:

  • 1 cup Chopped Italian Parsley [optional]

  • 2 Serrano Chili Peppers, sliced [optional]

I like a little fresh herb and a little kick in my pasta salad. Purely optional.

Mix and serve.
