Breakfast Burrito Freezer Meal Prep

This incredibly tasty breakfast burrito can be had anytime of the day when you meal-prep and freeze them in batches. Features sausage, egg, & cheese.

Step 1:

  • 4 cups Shredded Cheese (I used sharp cheddar)

Shred and set aside or use pre-shredded cheese.

Step 2:

  • Cooking Spray

  • 1 cup Small Diced Onions

Saute until soft.

Step 3:

  • 2 lbs Breakfast Sausage

  • 2 tsp Ground Sage

  • Fresh Cracked Black Pepper (~1/2 tsp)

Get a large pot hot. Then add cooking spray (I skip regular oil so it doesn’t ooze out of the burrito). Brown the meat and add spices.

Step 4:

  • Cooking Spray

  • 12 Eggs, beaten

  • 2 TB Milk / Milk Substitute / Water (I used almond milk)

  • 1 tsp Salt

  • Fresh Cracked Black Pepper (~1/4 tsp)

Get a separate pan hot. Add cooking spray and make scrambled eggs in BATCHES. Set aside.

Step 5:

Over low heat, warm up sausage mixture from Step 3.

Fold in cheese from Step 1 until slightly melted and gooey (is that a word?).

Turn off heat and fold in the eggs from Step 4.

Step 6:

  • 8-12 Large Burrito Tortillas

Layout stuffing from Step 5 and roll into burritos. If you like, you can sear them on a medium-hot pan before packaging and freezing. You can freeze them on a tray and then separate them and put them all in a plastic bag. Otherwise, you can individually package them in parchment paper or aluminum foil.
