Sardine Toast
Step 1:
1 can Quality Sardines with Olive Oil*, do not drain
1/2 medium Shallot (sub Onion if desired), minced
1/4 cup Italian Parsley, chopped
1 TB Capers, minced
Juice of 1/2 Lemon
Sliced Thai Green Chili or Serrano Pepper, optional
Salt & Pepper
In a mixing bowl, break up sardines with a fork. Add remaining ingredients and mix well. Taste the salt level (different sardine brands vary in this). Adjust based on your taste. Add black pepper. Serve on toast. If you’re avoiding the toast, this makes a great topper on some salad greens!
