Sardine Toast & Sardine Pasta

Sardine Two Ways - You can turn a can of sardines into a delicious lunch (Sardine Toast) or a rich, tasty dinner (Sardine Pasta with Lemon Butter) by simply modifying the same recipe!

Sardine Toast

Step 1:

  • 1 can Quality Sardines with Olive Oil*, do not drain

  • 1/2 medium Shallot (sub Onion if desired), minced

  • 1/4 cup Italian Parsley, chopped

  • 1 TB Capers, minced

  • Juice of 1/2 Lemon

  • Sliced Thai Green Chili or Serrano Pepper, optional

  • Salt & Pepper

In a mixing bowl, break up sardines with a fork. Add remaining ingredients and mix well. Taste the salt level (different sardine brands vary in this). Adjust based on your taste. Add black pepper. Serve on toast. If you’re avoiding the toast, this makes a great topper on some salad greens!

Sardine Pasta with Lemon Butter

Step 1:

Create the same mix as the recipe above, but leave out the lemon and shallot (save for later)!

Step 2: Optional Breadcrumb Topping

  • 1 TB Extra Virgin Olive Oil

  • Breadcrumbs

In a pan, heat the oil and then toast the breadcrumbs until brown.

Step 3:

  • 2 TB Butter

  • 1 TB Extra Virgin Olive Oil

  • 1/2 medium Shallot (sub Onion if desired), minced

  • Juice of 1/2 Lemon

In a saucepan, heat oil and butter until it begins to brown. Add shallots and lemon juice and cook until shallots have softened.

Step 4:

  • 1 large Garlic Clove, minced

  • 1/4 cup White Wine

  • Optional: add more Butter and Olive Oil if you want it more saucy

Add garlic and wine. Let garlic cook until golden.

Step 5:

  • Original Sardine Mixture described in Step 1

  • Pasta of your choice

  • Salt & Pepper

Add sardine mixture and saute about 30 seconds. Then add pasta and toss until fully mixed. Taste for salt and pepper and make necessary adjustments.

Step 6:

  • Breadcrumbs from Step 2 (optional)

Serve and top with toasted breadcrumbs (adds a lovely contrasting texture).
